Ingredients

4 lbs beef brisket , cut into large strips
3 tomatoes , seeded and chopped
2 bell peppers , seeded and thinly sliced
3 onions , thinly sliced
9 garlic cloves , chopped
1 cup orange juice
1 cup lime juice
4 tablespoons salt
4 green plantains , peeled and halved crosswise
4 ripe plantains or 4 bananas , peeled and halved crosswise
2 lbs yucca root , peeled and cut into large pieces ( cassava )

Baho is a traditional Central American dish that is popular in countries like Nicaragua, Honduras and El Salvador. The dish consists of beef brisket and vegetables like green plantains, ripe plantains or bananas and yucca root wrapped in banana leaves and steamed until tender. Instructions

1.Wash the banana leaves in cold water and pat dry. Cut into 8-10 inch wide pieces.
2.In a large bowl, combine the beef, tomatoes, bell peppers, onions, garlic, orange juice, lime juice, and salt. Mix to coat the beef and vegetables well.
3.Lay the banana leaf pieces flat on a work surface.
4.Arrange a piece of green plantain, ripe plantain or banana and yucca on each banana leaf.
5.Top the yucca with a 1/4 inch thick strip of the beef mixture.
6.Cover the beef with the remaining yucca, plantain and banana pieces.
7.Fold the banana leaves over and around the contents, completely wrapping it so that it forms a rectangular package. Tie each end with kitchen twine to secure the package.
8.Arrange the baho packages in a single layer in a large pot.
9.Pour in enough water to come about 1 inch up the sides of the packages. Cover the pot and bring to a boil over medium heat.
10.Lower the heat and simmer for 2 hours, or until the beef and yucca are tender.
11.Remove the banana leaf and serve the baho hot.
