Ingredients

1 1/2 lbs chicken , cut up ( if preferred you may use all breast etc , can go up to 2 pounds of chicken )
1 large onion , sliced
1/4 cup lime juice 1/2 teaspoon thyme
salt and pepper
2 tablespoons cooking oil
Bahamian Style Simmered Chicken is an amazing Caribbean dish with bold and spicy flavors. The dish has juicy chicken that is simmered in a delicious mix of lime juice, thyme, salt, and pepper. Instructions

1.Add oil to a large skillet and heat on medium-high heat. Add chicken and cook until the pieces turn brown. Transfer the browned chicken to a separate dish.
2.In the same skillet, add onion and cook until translucent. Add lime juice, thyme, salt, and pepper. Mix it well and allow it to cook for a minute or so.
3.Add chicken pieces back into the skillet with the onion mix and cover it. Let it simmer on low to medium heat.
4.After 20 minutes, uncover the skillet and allow the chicken pieces to cook and the sauce to thicken. Serve the chicken hot.
