Ingredients

1/4 cup fresh lime juice
2 cups ketchup
1 tablespoon Worcestershire sauce

salt and pepper , to taste
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon white pepper
5 ounces conch , cooked and finely chopped
5 ounces cod , cooked and flaked
3/4 cup bottled clam juice
1/2 cup milk
1 1/2 quarts peanut oil or 1 1/2 quarts light olive oil , divided ( 1.5L )
1 green plantain
10 romaine lettuce leaves , cleaned and dried
1 red pepper , diced small

Instructions

1.In a bowl, whisk 1/4 cup of lime juice, ketchup, Worcestershire sauce, pickapeppa red hot sauce, salt, and pepper together and chill in the refrigerator.
2.In another bowl, whisk flour, baking powder, salt, and white pepper together.
3.Fold in conch and cod.
4.Gradually stir in clam juice and milk until a batter is formed.
5.Heat 2 inches of oil in a heavy pan to 375°F.
6.Peel plantain and cut into thin slices and fry until crisp and golden brown then drain on paper towels.
7.Drop 2 Tablespoons of batter into the hot oil and cook until golden brown.
8.Remove with a slotted spoon and drain on paper towels.
9.To serve, place lettuce on plates and top with fritters and plantains.
10.Drizzle with the prepared cocktail sauce and top with diced red pepper.
