The Bahama Mama Chicken Marinade is a tropical twist on traditional BBQ chicken. The flavors of dark rum, lime juice, and allspice combine to give the dish a deliciously sweet and tangy taste. It's perfect for summer evenings spent grilling with friends and family. The marinade can be prepared ahead of time, making this an easy and flavorful option for busy weeknights as well.

Instructions

1.In a small bowl, combine olive oil, garlic, green onions, jalapeno pepper, bay leaves, onion, rum, lime juice, salt, allspice, thyme, cloves, and hot sauce.
2.Put the chicken breasts in a large ziplock bag, pour the marinade into the bag, reserving about 1/4 cup of marinade for basting later, and mix until the chicken is fully coated.
3.Marinate for at least 2 hours, but ideally overnight, in the fridge.
4.Preheat grill to medium-high heat and lightly oil the grate. Grill chicken for 6-8 minutes per side, or until fully cooked, basting occasionally with the reserved marinade during the last few minutes of grilling.
