Ingredients

1 small fresh orange baking pumpkin
sugar
orange blossom water
ground cardamom
chopped pistachios
Baghdadi Pumpkin Jam is a sweet and spicy spread that is popular in Iraq and other parts of the Middle East. It is made by cooking fresh pumpkin with sugar, orange blossom water, and ground cardamom until it thickens and becomes a jam-like consistency. The addition of chopped pistachios also adds flavor and texture to the spread. Baghdadi Pumpkin Jam can be enjoyed on bread, as a topping for yogurt or ice cream, or as a dip for fruit or vegetables.

Instructions

1.Preheat the oven to 350°F.
2.Cut the pumpkin in half and remove the seeds.
3.Place the pumpkin halves halves cut side down in a baking dish filled with 1/2 inch of water.
4.Bake for 45-60 minutes or until the pumpkin is tender enough to scoop out.
5.Scoop out the pumpkin and discard the skin.
6.Place the pumpkin in a heavy bottomed pot and add sugar in a 1:1 ratio to the pumpkin.
7.Cook over low heat until the sugar is dissolved.
8.Add in the orange blossom water and ground cardamom and continue to cook over low heat, stirring occasionally, until the mixture thickens and becomes jam-like in consistency.
9.Remove from heat and allow the mixture to cool completely.
10.Transfer to a clean glass jar and top with chopped pistachios.
