Ingredients

2 lbs boneless chicken breasts
6 eggs
1 cup cornstarch
8 teaspoons cornstarch
6 tablespoons sugar
2 tablespoons cayenne pepper
8 tablespoons cooking sherry
6 tablespoons rice vinegar
1 cup soy sauce
6 -10 garlic cloves , freshly sliced
48 ounces vegetable oil
1 cup basmat white rice

Instructions

1.Cut the chicken into small pieces and marinate for at least 30 minutes with salt, white pepper, and cooking wine.
2.Heat 2 cups of oil in a wok or deep fryer over high heat.
3.In a large bowl, beat the eggs and mix with cornstarch. Gradually add the chicken, tossing to coat evenly.
4.When the oil is hot, fry the chicken in batches for 4-5 minutes, or until golden brown. Use a slotted spoon to transfer the chicken to a plate lined with paper towel.
5.In a separate pan, heat 2 tablespoons of oil, add the garlic, and stir-fry until fragrant.
6.Add the cayenne pepper, soy sauce, rice vinegar, sherry, and sugar to the pan and stir.
7.Combine cornstarch with water and add it to the pan, stir until it thickens.
8.Add the fried chicken to the pan and stir.
9.Serve with basmati rice.
