Ingredients

1 head napa cabbage
3 tablespoons salt
water to cover
1 cup water
1 cup thinly grated white ( daikon ) radish
2 green onions , sliced diagonally into thin strips
4 cloves garlic , minced
2 slices fresh ginger
1 teaspoon white sugar
1 teaspoon salt
1 teaspoon white vinegar
3 pinches dried Korean red pepper threads
Baek Kimchi, or White Kimchi, is a popular variety of kimchi that originates from the southern regions of Korea. Unlike traditional kimchi, which is spicy and red in color, Baek Kimchi is made without any chili powder or paste and has a sweeter, milder taste. Instructions

1.Cut the cabbage into quarters and remove the core.
2.Rub salt over each piece of cabbage, making sure to get between the leaves.
3.Place the cabbage in a large bowl and cover with enough water to completely submerge it.
4.Let the cabbage soak for 2 hours, then rinse thoroughly in cold water and drain.
5.In a separate bowl, mix together the water, grated radish, green onions, garlic, ginger, sugar, salt, and vinegar to make the seasoning sauce.
6.Spread the seasoning sauce between the leaves of the cabbage, making sure to coat each leaf.
7.Place the cabbage in a clean, airtight container and sprinkle the dried Korean red pepper threads over the top.
8.Leave the kimchi to ferment in a cool, dark place for 2-3 days before serving chilled.
