Ingredients

1/2 cup coarse salt
1 napa cabbage , cut into chunks
2 jujube ( Chinese dates ) , or more to taste ( optional )
5 1/2 cups water , divided
3 tablespoons salted fermented shrimp ( saewujeot )
2 scallions , cut into 1-inch pieces
6 cloves garlic , sliced
2 tablespoons sliced fresh ginger
1/2 Korean radish , cut into matchsticks
5 chestnuts , cut into thin strips
1/2 pear , cut into matchsticks
2 carrots , cut into matchsticks
1 red chile pepper , seeded and thinly sliced , or more to taste
1 green chile pepper , seeded and thinly sliced , or more to taste
4 teaspoons brown sugar
2 teaspoons salt
Baek Kimchi, also known as white kimchi, is a non-spicy version of the popular Korean kimchi. Instead of using red pepper flakes, it relies on the tangy flavor of fermented shrimp to provide a unique umami taste. The dish is made by soaking napa cabbage in salt water, then combining it with a blend of vegetables and fermented seafood. Instructions

1.Dissolve the 1/2 cup coarse salt in a large bowl of water.
2.Add the napa cabbage and toss to coat. Cover and let stand for 4 hours.
3.Rinse the cabbage several times under cold running water.
4.Soak the jujube in 1 cup hot water for 30 minutes.
5.Combine the remaining 4 1/2 cups of water, fermented shrimp, scallions, garlic, and ginger in a blender and process until smooth.
6.Slice the jujube and combine it with the radish, chestnuts, pear, carrots, and red and green chile peppers.
7.Mix the blended sauce with the jujube mixture.
8.Place the cabbage in a large container with a tight-fitting lid.
9.Pour the sauce over the cabbage and mix well.
10.Cover and refrigerate for at least 2 days before serving.
