Ingredients

4 chicken quarters , skinned , rinsed and patted dry ( could be cut into thigh and drumstick portions )
1 1/2 tablespoons coriander seeds
2 teaspoons whole black peppercorns
1 teaspoon cumin seed
6 garlic cloves , peeled
1 piece fresh ginger
3 tablespoons vegetable oil
1/4 cup water ( or as needed )
2 tablespoons fresh lemon juice
1 -3 teaspoon cayenne pepper ( see above )
1 1/2 teaspoons salt
1/2 cup fresh cilantro , chopped

Instructions

1.Combine coriander seeds, black peppercorns, and cumin seed in a grinder and grind to a fine powder. Set aside.

3.In a large mixing bowl, combine the ground spices, ginger garlic paste, lemon juice, cayenne, and salt. Mix until spices are well combined.
4.Add chicken and toss to coat. Let marinate for at least 2 hours in the refrigerator.
5.Preheat grill or grill pan over high heat. Brush grates with vegetable oil.
6.Remove chicken from marinade and shake off any excess. Place chicken on the grill.
7.Grill for about 6 minutes per side until chicken is cooked through.
8.Remove from grill and let rest for a few minutes. Serve with fresh cilantro.
