Ingredients

12 Thai eggplants ( washed and slit into 4 quarters without slicing all the way )
4 tablespoons roasted peanuts ( skinless )
2 tablespoons roasted sesame seeds
1 tablespoon channa dal
1 tablespoon Urad Dal
4 dried red chilies ( depending on your spice level )
2 tablespoons coriander seeds or 2 tablespoons coriander powder
1 teaspoon mustard
1 teaspoon cumin
5 -6 curry leaves
4 tablespoons grated coconut
1 teaspoon tamarind paste ( depends on the strength of the paste )
1 teaspoon turmeric powder
2 tablespoons powdered jaggery
1 pinch hing
salt , to taste
3 medium onions , chopped
3 -5 tablespoons oil
coriander leaves ( to garnish ) ( optional )

Instructions

1.In a blender, grind the roasted peanuts, sesame seeds, channa dal, urad dal, dried red chilies, coriander seeds or powder, mustard, and cumin to form a smooth paste.
2.Heat 3 tablespoon oil in a pan then add chopped onions and curry leaves, cook until the onions turn golden brown.
3.Add the peanut-spice paste to the pan along with turmeric, tamarind paste, jaggery, hing, and salt to taste. Cook for 2-3 minutes while stirring occasionally.
4.Stuff the prepared spice paste into the quartered eggplants.
5.Heat the remaining oil in a pan and arrange the stuffed eggplants side by side on it. Cover and cook on low heat until the eggplants are soft and fully cooked.
6.Garnish with coriander leaves (optional) and serve with rice or roti.
