Ingredients

1 1/2 kg chicken pieces ( bone on )
3 medium onions , sliced
1 cup yogurt
6 -7 cardamoms
10 -15 peppercorns
3 -4 black cardamom pods
6 -7 cloves
1 1/2 teaspoons cumin seeds , whole
2 cinnamon sticks
1 teaspoon coriander powder
2 teaspoons chili powder
1/2 teaspoon turmeric powder
1 1/4 teaspoons salt
1 teaspoon ginger , and
1 teaspoon garlic
1 teaspoon garam masala
julienned gingerroot
1/2 teaspoon ground nutmeg
1 teaspoon garam masala
10 -15 whole blanched almonds
Badami Qorma is a traditional Mughlai dish that originated in the Indian subcontinent during the Mughal dynasty. The word 'badami' means almond, which indicates that the curry has a distinct nutty flavor due to the use of almond paste and whole roasted almonds. The dish is slow-cooked in a Dutch oven using a blend of aromatic spices and yogurt, which gives it a creamy texture and a tangy flavor. Instructions

1.In a blender, grind the sliced onions into a smooth paste.
2.In a large bowl, whisk the yogurt until it reaches a smooth consistency. Keep aside.
3.In a skillet, roast the whole spices - cardamoms, peppercorns, black cardamom pods, cloves, whole cumin seeds, and cinnamon sticks. Grind them into a fine powder.
4.Heat oil in a large Dutch oven. Add ginger-garlic paste and the onion puree. Cook for 5 minutes, stirring, until the onions turn light brown.
5.Add the chicken pieces and cook on high heat for 5 minutes until they turn to a light golden color.
6.Add coriander powder, chili powder, turmeric, and salt. Cook for 2 minutes.
7.Add the whisked yogurt and keep stirring until the masala is cooked through.
8.Add the powdered spices and cook for 2 minutes.
9.Add enough water or chicken stock to cover the chicken pieces. Cover the Dutch oven and let the chicken cook for 25-30 minutes.
10.Add a spoonful of garam masala powder, julienned gingerroot, blanched almonds, and nutmeg powder. Cook for 5 more minutes. Serve hot with steamed rice or naan bread.
