Ingredients

8 ounces bacon , chopped
3 carrots , peeled and diced
3 celery ribs , diced
2 onions , diced
1 lb swiss chard ( leaves julienned , fibery stalks diced )
2 bay leaves
3 potatoes , diced
6 garlic cloves , diced
1 gallon chicken stock ( preferably your homemade , but purchased stock will work too )
salt and black pepper

Instructions

1.In a large pot, cook the bacon over medium-high heat until crispy. Remove the bacon and set it aside on a paper towel-lined plate.
2.In the same pot, add the carrots, celery, and onions and cook until the vegetables soften.
3.Add in the swiss chard, bay leaves, potatoes, and garlic. Pour in the chicken stock and bring to a simmer, then reduce the heat to low and let it cook for 10-15 minutes or until the potatoes are fork-tender.
4.Remove the bay leaves and use an immersion blender to puree the ingredients into a thick and creamy soup. If you don't have an immersion blender, you can use a regular blender, but be sure to allow the soup to cool a bit before blending and work in batches.
5.Add salt and black pepper to taste. Serve hot with a sprinkle of the crispy bacon on top.
