6 large eggs
2/3 cup creme fraiche or 2/3 cup heavy cream
1 cup whole milk
8 ounces gruyere or 8 ounces other swiss cheese

1/2 lb bacon , chopped
1/2 cup f shallot , chopped
8 ounces arugula , stems trimmed and coarsely chopped
2 teaspoons balsamic vinegar

Instructions

1.Preheat the oven to 375°F.
2.Unroll the pie crust and place it in a 9 inch pie dish, crimp the edges.

4.In a skillet, cook the bacon until crispy, remove the bacon with a slotted spoon and set aside.
