1 shallot , minced ( about 3 tablespoons )

1 tablespoon chipotle adobo sauce ( optional )

Instructions

1.In a frying pan on medium heat, cook chopped bacon and minced shallot until bacon is crispy and shallots are translucent. Drain excess grease.
2.Spread shredded cheddar cheese evenly over two tortillas. Add cooked bacon and shallot mixture on top of the cheese. Drizzle chipotle adobo sauce (optional) and sprinkle minced pickled jalapeno chilies over the top.
3.Place another tortilla on top and press down gently.
4.Heat 1 tablespoon of vegetable oil in a non-stick pan over medium heat. Carefully place the tortilla in the pan. Cook until cheese is melted and tortillas are crispy, about 2-3 minutes on each side.
5.Remove quesadilla from the pan and repeat steps 2-4 for the second quesadilla.
6.Serve with sides of salsa and guacamole.
