6 large plum tomatoes
1 package bacon , slices
1 medium onion , chopped
2 garlic cloves , minced
2 cups fresh asparagus , cut in 1/2 inch pieces
10 large eggs , beaten
1 teaspoon seasoning salt

1/2 cup sour cream
1/4 cup fresh parsley , chopped
2 cups shredded cheddar cheese , divided

Instructions

1.Preheat oven to 375°F.
2.Place tomatoes in a bowl and pour boiling water over them. Allow to sit for 30 seconds to one minute, and then remove from water.

10.Sprinkle 1 cup cheese over the top of the frittata.
11.Bake in the preheated oven for 20-25 minutes until frittata is set.
12.Sprinkle remaining cheese and crumbled bacon over the top and bake for 5-10 more minutes until cheese is melted.
