Instructions

.Rinse the grapes, then remove the stems and all other non-fruit material from the grapes that might have got into them. It helps to put your strainer/sieve over a big pot or bowl to catch the remains.
.Put the grapes in a medium-sized thick-bottomed pot and crush them a little with a potato masher to open them up, just until you can hear them popping. Alternatively puree them in a food processor in small batches and add them all to the pot.
.Add water to the pot with the grapes, bring the mixture to a boil and then reduce the heat to low and simmer for 10 minutes, degreasing occasionally with a spoon. When the grape solids rise to the top, degrease by scooping off with a spoon-
.After the 10 minutes, remove the pot from heat and let it cool down for a minute or two, then strain the juice off. You can get 7-8 cups of juice from 5 lbs of grapes. Compost the solids.
.Return the strained juice to the pot. Whisk in the pectin and the lemon juice. Place over high heat and bring to a boil, stirring constantly.
.Pour in sugar and honey, stir, and let the mixture come to a boil again. Let it boil for 2 minutes, then remove the pot from heat.
.Ladle the hot jam into warm, sterilized canning jars. Wipe the rim of the jars with a damp paper towel to remove any jam residues. Seal the jars with their lids and rings. Process in a boiling water bath for 10 minutes.
.Remove from water bath and let cool down to room temperature. Check that jars have sealed properly. This recipe yielded 5 12-oz jars for us with 1 1/2 cups of sugar and additional honey.
