1/2 cup whole blanched almond
1 tablespoon granulated sugar

3/4 cup heavy cream
2 2 teaspoons cognac ( or your favorite liqueur ) or 2 teaspoons grappa ( or your favorite liqueur )

Instructions

1.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

11.Meanwhile, prepare the ganache. In a small saucepan over low heat, combine the heavy cream and cognac/grappa. Heat until just simmering.
12.Remove from heat and add in the chopped chocolate and butter. Mix until the chocolate is melted and the ganache is smooth.
13.Allow the ganache to cool and thicken for about 15-20 minutes.
14.Sandwich two cookies together with a teaspoonful of ganache.
