Ingredients

1 1/2 lbs choice-grade boneless skinless salt cod fish , rinsed well
1 1/2 quarts water
3 celery ribs , thinly sliced crosswise
1 tablespoon minced garlic
1/4 cup kalamata olives or 1/4 cup other brine-cured black olives , pitted and chopped
1/3 cup chopped drained bottled roasted red pepper
1/2 cup fresh flat leaf parsley
3 tablespoons fresh lemon juice
1 teaspoon red wine vinegar ( to taste )
1/2 cup olive oil
1 lemon , quartered
1/4 cup capers
1 cup sweet bell peppers in hot vinegar sauce

Instructions

1.Fill a large pot with water and place it on medium to high heat. Once the water begins to boil, add the rinsed salt cod fish and cook for 10-20 minutes or until tender.
2.With the help of a slotted spoon, transfer the fish to a large bowl and let it cool down. Once cooled, break it up into bite-size pieces.
3.In a separate bowl mix the sliced celery, minced garlic, chopped olives, chopped roasted red pepper, and fresh flat leaf parsley. Add this mixture to the large bowl with fish.
4.Add the fresh lemon juice, red wine vinegar, and olive oil to the bowl. Mix well then add the capers and sweet bell peppers in hot vinegar sauce. Mix again.
5.Transfer the salad to a platter, garnish with lemon quarter slices, and serve.
