Ingredients

1 - 1 1/2 lb dried salt cod fish , `` baccala '' -soaked
1/2 cup olive oil , as needed ( for frying )
1 cup all-purpose flour
1 bunch fresh parsley , whole springs touch stems removed
4 -10 lemon wedges

Instructions

1.Rinse the soaked salt cod, then drain and pat dry.

5.When the oil is hot, add the fish to the skillet in a single layer, and fry until golden brown on both sides, about 3-4 minutes per side.
6.Remove the fish from the skillet, and transfer onto a paper towel lined plate or wire rack to drain off any excess oil.
7.Garnish the baccala fritto with fresh parsley and lemon wedges before serving.
