Ingredients

1 1/2 lbs salt cod fish
2 lbs russet potatoes , unpeeled , cut into 1/2-inch slices
3 large yellow onions , peeled and cut into 1/2-inch slices
2 cans fire-roasted diced tomatoes , preferably no salt added
1 jar roasted red peppers ( roasted and peeled fresh peppers may also be used ) or ( 12 ounce ) jar canned pimientos , drained and cut into 1/2-inch slices ( roasted and peeled fresh peppers may also be used )
6 garlic cloves , peeled and thinly sliced
2 bay leaves
2 small sprigs fresh rosemary
1/2 cup chopped fresh flat-leaf parsley
1 -2 dried hot red chile , seeded and chopped
10 black peppercorns
1 cup olive oil

Instructions

1.Rinse the salt cod fish under cold water and soak in a large bowl of cold water for at least 24 hours before using.
2.Drain the cod and cut it into 2-inch pieces.
3.In a large pot or Dutch oven, heat the olive oil over medium heat.
4.Add the sliced onions and cook until soft and translucent, about 10 minutes.
5.Add the sliced garlic and cook for another 2-3 minutes.
6.Add the sliced potatoes, diced tomatoes, sliced roasted red peppers, bay leaves, rosemary, chopped parsley, chopped hot red chiles, and black peppercorns to the pot.
7.Stir everything well and add just enough water to barely cover the potatoes.
8.Bring to a boil over high heat and then reduce the heat to low.
9.Add the sliced salt cod and stir gently to combine.
10.Cover and simmer for 30-40 minutes, or until the potatoes are tender and the stew is thickened and fragrant.
11.Taste the stew and add salt if needed.
12.Serve hot with a sprinkle of extra chopped parsley on top.
