4 ounces shiitake mushrooms , stems removed
1 tablespoon olive oil
12 ounces shelled edamame
3/4 - 1 cup water
1 teaspoon soy sauce ( optional )

Instructions

1.In a large skillet, heat olive oil over medium heat. Add shiitake mushrooms and sauté until tender.
2.In a pot, boil water and add edamame. Cook until tender. Drain and rinse with cool water.
3.In a blender or food processor, puree the shiitake mushrooms and edamame with 3/4 - 1 cup of water until smooth.
4.If preferred, add 1 teaspoon of soy sauce to the puree and blend until fully combined.
