Ingredients

2 lbs baby eggplants , each about 2 inches long
1/2 cup fresh lemon juice
50 whole blanched almonds
3 cups sugar
1/2 cup honey
3 inches cinnamon sticks
6 cloves , whole
2 large fresh thyme sprigs
2 1/2 cups water

Instructions

1.Cut off the stems of the baby eggplants and make cross-shaped slits on the bottom half of each one.

3.Drain and rinse the eggplants under cold water. Using a small spoon, carefully remove the flesh from the bottom half of the eggplants.
4.In a separate pot, combine sugar and water. Add the fresh lemon juice, honey, cinnamon sticks, cloves, and thyme sprigs.
5.Add the eggplants and bring the mixture to a boil over medium heat. After it boils, lower the heat and simmer for 1 hour and 30 minutes or until the syrup thickens.
6.Remove the eggplants from the syrup and arrange them on a plate. Insert a whole blanched almond into the cavity of each eggplant. Allow to cool to room temperature and serve.
