Ingredients

200 g cottage cheese ( paneer )
3 -4 red chilies , whole
2 medium sized onions ( roughly chopped )
10 -12 baby corn ( sliced thinly )
4 -5 garlic cloves ( roughly chopped )
3 tablespoons oil
2 cups tomato puree
salt
1 teaspoon red chili powder
1/2 teaspoon cumin powder
2 teaspoons coriander powder
1 teaspoon garam masala powder
1 tablespoon dry ground fenugreek ( kasuri methi )
2 inches piece gingerroot ( peeled )
12 -15 almonds

Instructions

1.Heat 3 tablespoons of oil in a pan.
2.Add the chopped onions, garlic, and red chilies and fry until the onions are golden brown.
3.Add the sliced baby corn and fry for 2-3 minutes.
4.Add the tomato puree, salt, red chili powder, cumin powder, coriander powder, garam masala powder, and dry ground fenugreek. Cook the mixture for about 5 minutes till the oil separates from the masala.
5.Add the grated cottage cheese and peeled gingerroot. Grind the almonds to a fine paste and add it to the pan. Cook for another 2-3 minutes.
6.Garnish with some fresh coriander leaves and serve hot with rice or naan.
