Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.Heat a large skillet over medium-high heat. Cook and stir beef and garlic in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Stir chipotle peppers, cumin, and chili powder into beef mixture.
3.Whisk cream cheese in a bowl until smooth. Stir red bell pepper and lime juice into cream cheese until evenly mixed.
4.Spread tomato, olives, and Cheddar cheese in the bottom of a 9x13-inch baking dish. Spoon beef mixture over the cheese layer. Spread cream cheese mixture evenly over beef mixture. Layer 1 1/2 cups iceberg lettuce over cream cheese mixture. Drizzle taco sauce over lettuce layer. Layer remaining 1/2 cup iceberg lettuce over taco sauce layer. Sprinkle green onion over lettuce layer. Top with diced avocado; sprinkle lime zest over dip.
5.Bake in the preheated oven until cheese is melted and dip is heated through, about 30 minutes. Remove from oven and let cool for 5 minutes. Top with sour cream and cilantro.
