Ingredients

1 eggplant
1 tablespoon fresh lemon juice
1 tablespoon extra virgin olive oil
2 tablespoons tahini ( sesame-seed paste )
2 tablespoons fresh basil
1 tablespoon of fresh mint
1 can green chili peppers
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 garlic cloves , minced
Baba Ghanoush, also spelled Baba Ghannouj, is a Middle Eastern dip that is famous throughout the Levant, North Africa, and Greece. It is made from roasted eggplants blended with tahini, garlic, lemon juice, and other spices. Baba Ghanoush, along with hummus, is an essential part of any mezze platter and can be served as an appetizer, a dip, or a sandwich spread. It is creamy, tangy, and smoky and goes well with pita bread, crackers, vegetables, or any other snack you like. Baba Ghanoush is also very easy to make, and you can adjust its seasoning and ingredients to suit your taste.

Instructions

1.Preheat your oven to 230°C (450°F) and line a baking sheet with parchment paper.
2.Cut your eggplant in half, lengthwise, and cut a few shallow slits on the surface to help it release steam.
3.Drizzle olive oil on the surface of the eggplant and spread it with your fingers so both halves are coated.
4.Roast the eggplant in the oven for 25-30 minutes until it has collapsed and is thoroughly cooked.
5.Take out the eggplant from the oven and let it cool down completely. Scoop out the flesh with a spoon and discard the skin.
6.Combine the eggplant flesh with garlic, tahini, lemon juice, salt, and black pepper in a food processor or blender. Pulse a few times until smooth and creamy.
7.Add green chili peppers, basil, and mint leaves and blend again until fully combined.
8.Taste and adjust seasoning and citrus as per your preference.
9.Transfer the dip to a serving bowl, drizzle a little extra virgin olive oil on top and garnish with some finely chopped basil leaves if you like.
