1 1/2 teaspoons salt

Instructions

1.Preheat oven to 450°F/ 230°C.
2.Wash and dry the eggplants and prick the skin all over with a fork.

4.Remove from oven and allow the eggplants to cool completely.
5.Cut the eggplants in half, scoop out the flesh and discard the skin.
6.In a food processor, blend the eggplant flesh, lemon juice, tahini, garlic, olive oil, cayenne pepper, cumin, and salt until smooth and creamy.
7.Taste and adjust seasonings as desired.
8.Garnish with a drizzle of olive oil, a sprinkle of paprika, and some fresh parsley leaves. Serve chilled or at room temperature.
