1 medium eggplant , peeled ( and cut into 1/2-inch cubes ( about 3 cups )
1/4 cup tahini
1 tablespoon lemon juice
1 garlic clove
1/4 teaspoon black pepper
1 dash cumin , Ground
2 tablespoons sesame seeds
2 tablespoons fresh parsley , Finely chopped

Instructions

1.Preheat the oven to 425 degrees F (220 degrees C).
2.In a baking sheet, toss the cubed eggplant with some salt and olive oil then roast the eggplant for 20 minutes until lightly browned and fully softened.
3.Once cooked, let the eggplant cool for several minutes.
4.In a blender, add the cooked eggplant cubes, tahini, lemon juice, garlic, black pepper, cumin, and sesame seeds then blend until completely smooth.
5.Taste and adjust seasoning with salt as needed.
6.Transfer the dip into a serving bowl and top it with chopped parsley and a drizzle of olive oil.
