Ingredients

2 medium eggplants
1 lemon , juice of
1/2 cup tahini
3 -6 garlic cloves
1/2 cup parsley , chopped ( , loose pack )
1 teaspoon salt
1/4 cup minced scallion
black pepper
1 teaspoon olive oil ( if needed )
Baba Ganouy, also known as Baba Ghanoush or Baba Gannoujh, is a popular Middle Eastern dip. It is a versatile dish that can be used as a dip, spread, or a side dish. Instructions

1.Preheat your oven to 400 degrees F.
2.Line a baking sheet with parchment paper.
3.Use a fork to puncture the eggplants in several places, place them on the baking sheet, and roast them for 40-50 minutes, or until the skin is charred and they look wilted.
4.Remove from the oven and let them cool down a bit.
5.Cut open the eggplants, remove the flesh and put it in a bowl.
6.Add the garlic, salt and tahini to the bowl and mix well.
7.Gradually add the lemon juice and mix well.
8.Gradually add the olive oil (if necessary) and continue mixing until you have a smooth, creamy texture.
9.Season with black pepper and sprinkle with chopped parsley and scallions before serving.
