Ingredients

2 medium eggplants
2 -3 garlic cloves
1/3 cup tahini ( sesame paste )
2 tablespoons lemon juice
3/4 teaspoon salt
Baba-ganouj, also spelled Baba Ghanoush or Baba Gannoujh, is a classic Middle Eastern dip that is made with roasted eggplant, tahini, garlic, and lemon juice. Instructions

1.Preheat the oven to 400°F (200°C).
2.Use a fork to prick the eggplants all over, then place them on a baking sheet lined with parchment paper.
3.Roast the eggplants in the oven for 35-45 minutes, until the skin is charred and the eggplants are tender.
4.Once the eggplants are cool enough to handle, slice them in half and scoop the flesh into a colander.
5.Press the eggplant flesh with a spatula to remove any excess liquid, then transfer it to a food processor.
6.Add the garlic, tahini, lemon juice, and salt to the food processor, and pulse until the mixture is smooth.
7.Taste and adjust the seasoning as needed, adding more salt or lemon juice if desired.
8.Serve the baba-ganouj immediately, garnished with chopped fresh parsley or pomegranate seeds if desired.
