Instructions

1.Preheat your oven to 400°F.
2.Cut the eggplants in half lengthwise and place cut-side up on a baking sheet.

5.Roast the eggplants in the oven for about 40 minutes until the skins are wrinkled and the flesh is soft.

8.Add the remaining ingredients to the food processor and pulse until smooth.
9.Season with additional salt and pepper to taste.
