2 l-pound eggplants
1/4 cup olive oil
1/4 cup tahini ( sesame seed paste )
3 tablespoons lemon juice
1 minced garlic clove
pita bread , wedges
Baba Gannoujh, also known as Baba Ganoush, is a popular Middle Eastern dip made from roasted eggplant, tahini, lemon juice, and garlic. Instructions

1.Preheat the oven to 450°F (230°C).
2.Slice the eggplants in half lengthwise and brush the cut side with olive oil. Place on a baking sheet, cut side down, and roast for 25-30 minutes until the eggplants are soft.
3.Scoop out the flesh of the eggplants and discard the skins. Place the flesh in a blender or food processor along with the tahini, lemon juice, and garlic. Blend until smooth.
4.Transfer the dip to a serving bowl, drizzle with a little more olive oil, and serve with pita bread wedges.
