700 g pork belly , cut into 3cm strips
salt & freshly ground black pepper
4 fresh red chilies , deseeded
2 tablespoons clear honey , warmed
50 g 75 % cocoa solids chocolate , melted
stir-fried vegetables , to serve

Instructions

1.Preheat oven to 160°C fan/gas mark 4.
2.Season the pork with salt and freshly ground black pepper.

4.Remove the pork from the oven and increase the temperature to 200°C fan/gas mark 6.
5.In a blender, blitz together the deseeded red chillies and warmed clear honey until smooth.
6.In a small bowl, melt the 75% cocoa solids chocolate in the microwave or over a bain-marie.
7.Brush the honey and chilli mixture onto the pork strips.
8.Return the pork to the oven for an additional 10 minutes.
9.Remove the pork from the oven and evenly drizzle the melted chocolate over the pork strips.
10.Serve with stir-fried vegetables.
