Ingredients

8 large chicken drumsticks
5 red chilies
6 dried chilies

1 teaspoon paprika
2 tablespoons sugar

2 limes , juice of

2 cups of thick coconut cream
3/4 cup desiccated coconut
4 bay leaves

Instructions

1.Blend the red chilies, dried chilies, garlic cloves, onion, lemongrass, and ground galangal into a smooth paste.
2.Heat olive oil in a wok and fry the spice paste until fragrant.
3.Add sugar, salt, limes juice, and coconut cream. Stir until combined.
4.Toss in the chicken drumsticks and mix it well until the chicken covered in the sauce.
5.Place bay leaves on top of the chicken.
6.Cover the wok and let it cook over medium heat for about 30 minutes or until the chicken is cooked through.
7.Preheat oven to 220°C.
8.Roast desiccated coconut on a baking tray for roughly 10 minutes or until golden brown, stirring occasionally.
9.Serve the ayam panggang with roasted desiccated coconut on top.
