Ingredients

4 corn tortillas
2 cups white Mexican blend cheese , crumbled or cubed ( Oaxacan is best , but Monterey Jack or Chihuahua would be okay )
2 green onions , sliced
1 1/2 teaspoons olive oil or 1 1/2 teaspoons corn oil
1/2 medium onion , finely diced
2 cloves garlic , minced
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/8 teaspoon cinnamon
5 teaspoons flour
2 tablespoons chili powder
2 1/4 cups vegetable stock or 2 1/4 cups chicken stock
1 ounce semisweet chocolate
Take a break from the traditional red sauce and try something new with these Awesome White Cheese and Chocolate Enchiladas. Instructions

1.Preheat oven to 350°F.
2.In a large pan, heat oil over medium heat and add onion and garlic. Cook until softened, about 5 minutes.
3.Add oregano, cumin, cinnamon, flour, and chili powder. Stir until well combined and cook for an additional minute.
4.Slowly add in stock, stirring constantly to avoid lumps. Bring to a boil, then reduce heat and let simmer until thickened, about 5 minutes.
5.Add chocolate and stir until melted, then remove from heat.
6.Grease a baking dish and spread a small amount of sauce on the bottom.
7.Place a tortilla on a plate and spread a tablespoon of sauce down the center. Add some cheese and green onion, then roll up and place seam side down in the baking dish. Repeat with remaining tortillas.
8.Pour remaining sauce over the top of all enchiladas, then bake for 20-25 minutes.
9.Serve hot with additional green onion or cilantro on top.
