1/2 avocado , sliced thinly
1/4 cup salted peanuts
2 sheets nori

Instructions

1.Prepare the sushi rice according to package instructions and set aside to cool.
2.Place a sheet of nori, shiny side down, on a sushi mat.
3.Spread half of the cooled sushi rice evenly over the entire nori sheet, leaving a gap at the end closest to you.
4.Arrange thin slices of avocado and a sprinkle of salted peanuts on top of the rice.
5.Lift the edge of the mat closest to you and roll it over the filling, bringing the edge of the nori over the rice and filling. Press down gently to shape the roll.
6.Repeat with the second sheet of nori and remaining ingredients.
7.Cut the rolls into bite-sized pieces and serve immediately.
