Instructions

1.Heat olive oil in a pan over medium heat.
2.Add shrimp and sauté for 2 minutes, then add cornstarch and sake and cook until shrimp is pink and cooked through.

4.Toast bread slices and spread the avocado mixture evenly on each slice.
5.Top 2 slices with chopped lettuce and sliced tomatoes.
6.Divide shrimp evenly among the 2 slices and sprinkle grated cheese on top.
7.Top with the remaining slices of bread to form a sandwich.
8.Preheat a sandwich press or non-stick pan over medium heat.
9.Brush olive oil on the outside of each slice of bread.
10.Grill in the sandwich press or in the pan until cheese is melted and bread is golden brown.
