Ingredients

1 cup sushi rice
2 tablespoons rice vinegar ( available at Oriental markets , specialty foods shops , and some supermarkets )
1 teaspoon sugar
1 teaspoon dry sherry
1/2 teaspoon salt
1/2 avocado ( preferably California )
fresh lemon juice , for rubbing the avocado
3 sheets toasted nori
1/2 cucumber , peeled and cut lengthwise into 8 by 1/4-inch strips
1/4 lb fresh king crab meat , thawed if frozen , picked over , and drained
wasabi soy sauce
pickled ginger
Avocado and crab-meat sushi is a non-traditional sushi roll that originated in California, USA. It features a combination of creamy avocado and sweet, succulent crab meat, which is usually served with sushi rice, cucumber, and wasabi soy sauce. Instructions

1.Rinse the sushi rice thoroughly and drain.

3.Add the rice to the saucepan and stir to combine. Add enough water to cover the rice by 1 inch. Bring to a boil and reduce the heat to low. Cover the saucepan and simmer for 20 minutes.
4.Remove the saucepan from the heat and let it stand, covered, for an additional 10 minutes.
5.In the meantime, slice the avocado in half, remove the pit, and rub the cut surface with lemon juice to prevent browning.
6.Place a sheet of nori on a bamboo sushi mat, shiny-side down. Wet your hands and gently spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top edge.
7.Arrange the strips of cucumber and crab meat on the rice, near the bottom edge.
8.Cut the avocado into 1/4-inch slices and arrange them on top of the cucumber and crab meat.
9.Lift the bottom edge of the sushi mat up and over the filling, rolling it away from you and pressing gently to form a tight roll.
10.Repeat with the remaining nori sheets and filling.
11.Slice the rolls into 1-inch pieces with a sharp knife.
12.Serve with wasabi soy sauce and pickled ginger.
