1 teaspoon turmeric powder
1 1/2 cups desiccated coconut
5 -8 green chilies
3 -4 tablespoons curds
1 teaspoon salt
10 curry leaves
2 tablespoons coconut oil

Instructions

1.Wash and chop the mixed vegetables into small pieces
2.Cook the chopped vegetables in a pan with turmeric powder, curry leaves and salt for around 15-20 minutes until they are well cooked
3.In a grinder, blend the desiccated coconut and green chilies to form a fine paste
4.Add this paste to the cooked vegetables and mix well
5.Turn off the heat and add curd to the mixture. Mix well.
6.In a separate pan, heat coconut oil and add the remaining curry leaves in it.
7.Pour this tempered oil over the Aviyal and serve hot.
