Ingredients

1 cup yam , chopped
1 cup snake gourd , chopped
1 cup cucumber , chopped
1/2 cup long runner beans , chopped
1/4 cup carrot , chopped
1/2 teaspoon turmeric powder
1/2 fresh coconut , grated
1/2 teaspoon cumin seed
2 vegetable drumsticks , sliced
1 raw banana , chopped
2 sprigs curry leaves
3 cups coconut oil
5 green chilies
1/8 cup raw green mango , cut in 4 cubes ( for sourness )
2 teaspoons salt
Avial is a popular vegetable side dish hailing from the state of Kerala, located in South India. Instructions

1.In a large pot, place all the chopped vegetables, turmeric powder, salt, and curry leaves in it, and combine everything well.
2.Add a cup of water, close the lid and keep the pot on medium heat. Cook for about 15-20 minutes or until the vegetables are nicely done.
3.Meanwhile, grind together fresh grated coconut, cumin seeds, and and green chilies into a smooth paste.
4.Wake up the cooked vegetables and allow the water to evaporate. Add the sliced drumsticks, and cook for another 7-8 minutes, or until the drumstick is cooked and tender.
5.Now add the ground coconut paste to the vegetables, and let it cook for 3-4 minutes, stirring occasionally.
6.Finally, mix the four small green mango pieces, and cook for one more minute. Serve it as a side dish with steamed rice.
