Ingredients

1 whole chicken
1 cup rice or 1 cup orzo pasta
1 whole onion
avgolemono sauce
salt

Instructions

1.Cut the chicken into small pieces and place them in a large pot. Chop the onion and add it to the pot.
2.Add enough cold water to cover the chicken by about 2 inches. Bring to a boil over high heat, then reduce the heat to medium low and simmer for about 30 minutes or until the chicken is cooked through.
3.Once the chicken is cooked, remove it from the pot and set it aside to cool.
4.Meanwhile, strain the broth into a large bowl and discard the onion.
5.Rinse out the pot and add the rice or orzo. Pour in the broth and bring to a boil over high heat. Reduce the heat to medium low and simmer for about 15 minutes or until the rice or orzo is cooked through.
6.While the rice or orzo is cooking, prepare the avgolemono sauce. In a medium bowl, whisk together the egg yolks, lemon juice, and 1/2 cup of the broth until well combined. Slowly whisk in another 1/2 cup of the broth. Gradually pour the egg mixture into the pot, whisking constantly.
7.Add the reserved chicken to the pot and stir until heated through. Season with salt and pepper, to taste.
8.Ladle the soup into bowls and serve immediately.
