Ingredients

2 lbs mussels or 2 lbs clams , if using mussels pick small ones
1 onion
1/4 cup olive oil
1 tablespoon olive oil
3 garlic cloves , halved
1/4 cup white wine
pepper , to taste
1/8 teaspoon powdered saffron
1 cup uncooked rice
2 cups fish stock , brought to a boil or 2 cups boiling water

Instructions

1.Clean the mussels or clams in cold water, discarding any that are not tightly closed.
2.In a pot, sauté the onion in 1/4 cup of olive oil until it is translucent.
3.Add the garlic and stir for a few seconds.
4.Add the mussels or clams, white wine, saffron, and pepper to the pot and cook, covered, until all of the shells are open, stirring occasionally.
5.Remove the mussels or clams from the pot and set aside, discarding any that did not open.
6.Add 1 tablespoon of olive oil to the pot and stir in the uncooked rice until it is coated.
7.Add the fish stock or boiling water to the pot, bring to a boil, then reduce the heat to low and cover.
8.Simmer for about 20 minutes, stirring occasionally, until the rice is cooked and has absorbed most of the liquid.
9.Serve the rice with the mussels or clams on top as a garnish, with wedges of lemon if desired.
