Instructions

1.In a small bowl, combine the allspice, ginger, cloves, cinnamon, and black pepper. Set aside.

3.Add the spice mixture, brown sugar, cider vinegar, Worcestershire sauce, hot chili sauce, and dark rum to the pot, stirring well to combine.
4.Add the carrots, green pepper, yellow pepper, red chile, white onion, and water to the pot and bring to a boil.
5.Reduce the heat to low, cover the pot, and let simmer for 2-2.5 hours or until the meat is tender.
6.Garnish with fresh coriander and serve hot with rice and/or bread.
