Instructions

1.In a large bowl, beat the egg yolks and sugar together until pale and creamy.

4.Gently fold the mascarpone into the egg yolk mixture, and then fold in the egg whites.
5.In a shallow dish, mix the remaining one cup of cooled espresso and a pinch of sugar.
6.Dip the ladyfingers into the espresso mixture, and then arrange them in a single layer in a large serving dish.
7.Spread half of the mascarpone mixture on top of the ladyfingers, and then repeat with another layer of ladyfingers and mascarpone.
8.Dust the top of the tiramisu with cocoa powder.
9.Cover the tiramisu with plastic wrap and refrigerate for at least two hours, but preferably overnight, to set.
