Ingredients

3/4 cup all-purpose flour
1 tablespoon white sugar
1/2 teaspoon salt
1 tablespoon butter , or as needed
Swedish pancakes, or pannkakor, are a staple of Scandinavian cuisine and are often served for breakfast or brunch. Unlike American pancakes, Swedish pancakes are paper-thin and have a delicate texture. They are traditionally served with lingonberry jam and whipped cream, or with a sprinkle of powdered sugar. While they may look similar to French crepes, Swedish pancakes are slightly thicker and typically made with a batter that includes eggs and milk. Despite their simplicity, Swedish pancakes are a beloved comfort food in Sweden and beyond.

Instructions

1.In a bowl, whisk together eggs, milk, flour, sugar and salt until batter is smooth. Let the batter rest for 10 minutes.
2.Meanwhile, heat a skillet or frying pan over medium-high heat. Melt 1 tablespoon of butter in the skillet.
3.Pour 1/4 cup of batter into the hot skillet and tilt the pan to spread the batter out into a thin layer. Cook until edges start to brown and the pancake is set, about 1-2 minutes.
4.Using a spatula, flip the pancake and cook for an additional 30 seconds on the other side. Repeat with remaining batter, adding more butter to the skillet as needed.

PROS

Swedish pancakes are thin and delicate, with a light and fluffy texture that will melt in your mouth.
They are quick and easy to make, and can be customized with different toppings, including fruit, syrup, and whipped cream.

CONS

Swedish pancakes are not particularly filling or nutritious on their own, and can be high in calories if loaded with toppings.
They can also be difficult to flip if the batter is not thin enough.

HEALTH & BENEFITS

While Swedish pancakes are not particularly healthy on their own, they can be made with whole wheat flour and served with fruit or yogurt to increase their nutritional value. They are also a good source of protein, calcium, and vitamin D if made with milk and eggs.
