Ingredients

3 chicken breasts , cut into 1-inch cubes
2 cups basmati rice
1 large red onion , chopped lengthwise
2 large tomatoes , diced
2 tablespoons fresh ginger-garlic paste
1/2 tablespoon turmeric
1 whole cinnamon stick
4 whole cloves
2 bay leaves
3/4 tablespoon salt
1/2 teaspoon white vinegar
2 tablespoons red chili powder
5 green chilies , chopped
1 teaspoon cayenne pepper
1 tablespoon coriander powder
1/2 tablespoon garam masala
1 generous pinch saffron thread ( optional )
1 tablespoon chicken garam masala powder ( optional )
1/2 cup plain yogurt
1 bunch cilantro leaf , chopped
3 cups water
ghee ( this is crucial to the flavor )
2 teaspoons rose water
3 hard-boiled eggs , sliced

Instructions

1.Wash and soak the basmati rice in water for 15 minutes.
2.In a large pot, heat ghee over medium-high heat. Add the cinnamon stick, cloves, and bay leaves and stir for 30 seconds.
3.Add the chopped onions and stir occasionally until they turn golden brown.
4.Add the ginger-garlic paste, turmeric, red chili powder, cayenne pepper, coriander powder, and garam masala.
5.Add the chicken and cook for 5-6 minutes until it turns white.
6.Add the chopped tomatoes and stir for 2-3 minutes until they become soft.
7.Add 3 cups of water and salt. Bring it to a boil and then reduce the heat to low. Cover and let it simmer for 20-25 minutes until the chicken is cooked through.
8.In a separate pan, fry half of the sliced onions until they are crispy and brown.
9.In a small bowl, mix the saffron threads with 2 tablespoons of warm milk.
10.Once the chicken is cooked, add the fried onions, yogurt, chopped cilantro, green chilies, chicken garam masala powder, and white vinegar. Mix everything well and let it cook for another 5 minutes.
11.Drain the water from the soaked rice and add it to the chicken mixture. Mix well and add another 1.5 cups of water. Cover the lid and cook on low heat until the rice is cooked through.
12.Once the Biryani is ready, add the remaining fried onions, rose water, and sliced hard-boiled eggs on top.
13.Serve hot with raita or salad.
