Ingredients

3 cups red beans ( cooked )
1/4 small onion
1/2 cup corn oil
1 tablespoon salt
1 cup water ( I use cooking liquid from the beans )
3 lbs mozzarella cheese ( shredded )
1/2 green bell pepper ( diced )
1/2 cup chile ( I use lorocco which is a tropical flower found in latin markets )
4 cups masa corn flour ( I use maseca brand )
2 cups warm water
Authentic Salvadorean Pupusas are a popular street food in El Salvador. These round, flattened corn cakes are stuffed with various fillings, such as beans, cheese, and meat. They are typically served with salsa and curtido, a pickled carrot and cabbage slaw. Pupusas are often enjoyed as a snack or a meal and are perfect for sharing with friends and family. Instructions

1.In a blender, blend the cooked red beans and onion until smooth. Add corn oil, salt, and water, and blend again.
2.In a separate bowl, mix the shredded mozzarella cheese, diced green bell pepper, and chile.
3.In a large mixing bowl, combine the masa corn flour and warm water until it forms a dough.
4.Take a piece of dough and flatten it to form a small patty. Add a spoonful of the blended red bean mixture and some of the cheese mixture. Fold the dough over to seal in the fillings, shaping it into a ball.
5.Heat a griddle or frying pan over medium heat. Place the pupusas onto the hot griddle and cook for about 2-3 minutes on each side, until golden brown and slightly crispy.
