Ingredients

1 1/2 lbs beef
1 1/2 lbs sauerkraut
3 ounces dried mushrooms
1/2 cup pickled mushroom ( optional )
1/2 carrot , shredded
1 potato , cubed
1 onion , chopped
1/2 cup chopped celery root
1/2 cup celery , chopped ( and leaf )
1 teaspoon chopped dill
3 bay leaves
4 cloves garlic , diced
1 teaspoon sunflower oil
1 teaspoon heavy cream
1/2 cup sour cream
8 peppercorns
1 teaspoon marjoram
Russian Cabbage Soup, or Shchi, is an authentic and beloved dish in Russian cuisine. It is often made in large batches and can be eaten over several days. This soup is hearty and satisfying, making it the perfect comfort food.

Instructions

1.Rinse the sauerkraut and cover with cold water. Bring to a boil and then let simmer for 10-15 minutes.
2.In a separate pot, bring beef to a boil and let simmer until cooked through.
3.Remove beef from pot and cut into small pieces.
4.Add dried mushrooms and pickled mushrooms to beef stock and let simmer.
5.In a frying pan, fry onions and garlic until golden brown. Add to stock.
6.Add shredded carrot, celery root, celery, and potatoes to stock and let simmer.
7.Add sauerkraut, marjoram, bay leaves, and peppercorns to stock and let it cook for a while.
8.Lastly, add sour cream and heavy cream to stock before serving.
