Ingredients

2 chicken leg quarters , skin removed
5 cups water , or as needed to cover
1/2 small head green cabbage , chopped
2 carrots , peeled and sliced
2 stalks celery , sliced
1 onion , sliced
2 bay leaves
3 tablespoons chopped fresh parsley
1 clove garlic , minced
1 pinch ground thyme
1 pinch dried marjoram
salt and ground black pepper to taste
4 small dill pickles , thinly sliced
1 tablespoon all-purpose flour
1/4 cup sour cream

Instructions

1.Place the chicken leg quarters in a large soup pot, and cover with water. Bring to a boil, then reduce the heat and simmer for 30 minutes skimming foam from the surface as needed.
2.Add the cabbage, carrots, celery, onion, bay leaves, parsley, garlic, thyme, marjoram, salt and pepper to the pot. Simmer over low heat for another 30 minutes.
3.Remove the chicken from the pot, and shred the meat from the bones. Discard the bones and fat, and return the shredded meat to the pot.
4.Add the sliced pickles to the pot.
5.In a small bowl, whisk together the flour and sour cream. Gradually pour in some of the hot soup broth, whisking constantly.
6.Slowly pour the sour cream mixture into the soup pot, stirring constantly to avoid curdling. Simmer the soup over low heat for an additional 15-20 minutes until everything is heated through and the soup has thickened slightly before serving hot.
