9 pounds boneless pork butt
4 dried chipotle chili peppers

Instructions

1.Preheat oven to 325°F.
2.In a small bowl, mix together the minced garlic, minced oregano, salt, and pepper. Rub the seasoning mixture all over the pork.
3.In another small bowl, soak the dried chipotle peppers in hot water for 10 minutes. Remove the stems and seeds, and puree the peppers in a blender with 1/4 cup of water.
4.In a large oven-safe pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the pork and brown on all sides, about 10 minutes.
5.Remove the pork from the pot and add the minced garlic and chopped onions. Cook until softened, about 5 minutes.
6.Add the chopped tomatoes and pureed chipotle pepper to the pot, and bring to a simmer.
7.Return the pork to the pot and add 1 cup of water and 5 teaspoons of minced oregano.
8.Cover the pot and transfer it to the oven. Roast the pork for 3-4 hours or until it is tender and easily shreds with a fork.
9.Remove from the oven, shred the pork, and mix it with the sauce.
10.To assemble the tortas ahogadas, first lightly toast the bolillo rolls. Then stuff them with the shredded pork and pour the sauce on top.
11.Finish with sliced pickled jalapeno peppers and enjoy!
