2 eggs , separated
1 teaspoon baking powder
3/4 cup all-purpose flour
1 cup vegetable shortening for frying

Instructions

10.Dip each stuffed pepper in the egg mixture, being careful not to break it.
11.Fry each pepper in the hot shortening for about 3-4 minutes or until they are golden brown on all sides.
12.Drain the fried peppers on a paper towel-lined plate. Serve hot with your favorite toppings like salsa, guacamole, etc.
